SOIL: Clayey sandstone

YIELD: 40 hectolitres/hectare

WINEMAKING PROCESS: Mechanical harvesting at night | Skin maceration for 6 hrs and pressing | Alcoholic fermentation between 15°-17°C | Aged in underground vats carved in the rock.

CHARACTERISTICS: Wild peach, lychee, bright and clear colour | Its intense, highly nuanced nose starts with notes of white peach, followed by jasmine with a hint of violet, then enhanced by fruitier notes of wild peach and cherry. | A full, velvety mouthfeel, delicate and silky, with cherry and exotic fruit. Long, very enticing finish on kumquat.

TASTING TIPS: Pairs well with white meat, a veal escalope with tarragon or young lamb with fresh vegetables | With steamed vegetables | With salmon à l’unilateral (cooked on one side).

Serve between 8-10°C
